200ml fresh lemon juice
500g fine sugar

For the Premix (produces 850ml, to serve 10)

200ml clementine syrup (from the recipe above)
A few cranberries, to garnish

Instructions

To prepare the Cordial: Place the listed components in a pan, heat until it reaches a light boil, mixing until the sugar dissolves. Then, remove from the burner and let it to cool down entirely. Decant to a sterilised bottle, close it and refrigerate it chilled, where it will keep for up to one month.

For the Batch Mix: Combine all the liquid ingredients into one big jug, let it rest for an hour, then strain preferably using cheesecloth, to ensure it's fully clarified.

When ready to serve: Pour 85ml from the batch mix to a stirring glass containing ice, gently stirring lightly for one minute until cold. Strain into a frosted cocktail glass or similar, decorate with a few cranberries and finish using a brief mist of the essential oil over the drink.
